Born in Entebbe and raised in London, I grew up surrounded by bold flavours and rich aromas. Some of my earliest memories involve standing in the kitchen with my mother, tasting dishes before they were served to my father or guests. That constant exposure to vibrant cooking sparked a deep curiosity in me: Could science help us understand and recreate the magic behind these flavours?
Of all the ingredients I encountered, vanilla fascinated me the most.
While Madagascar is famous for vanilla, many people don’t realise that Ugandan vanilla often contains a significantly higher vanillin content — averaging 2.5% compared to Madagascar’s 1.8%. Grown under Uganda’s unique equatorial climate, our beans develop an intensely bold, creamy, and complex flavour profile with natural notes of fig, milk chocolate, and raisin.
This discovery became the foundation for Vanilla United.
